In a large bowl pour 1 tablespoon of lemon juice over a large, grated dessert apple. Add the following ingredients and stir well: 110g raisins, 110g currants, 110g ready to eat dried apricots, 110g dried dates, 110g chopped glace cherries, 450g sultanas, juice & zest of one large orange, 4 tablespoons orange marmalade, 175g soft brown sugar, 175g demerara sugar, 3 teaspoons Quay Ingredients Mixed Spice, half a teaspoon Quay Ingredients freshly grated Nutmeg, 150ml dark rum and 150ml brandy. Cover the bowl and leave for 2 days, stirring occasionally. Put in sterilised jars, seal and store in a cool place. Let it mature for at least 2 weeks – delicious in mince pies or mincemeat frangipane tarts
