Hot Madras Curry Powder
A quick hot and spicy curry blend
For a quick curry fry a large, sliced onion in 1 tbsp. of oil until golden. Add 500g meat and seal. Add 1 tbsp. of curry powder and cook for 1 minute. Add 500ml stock and simmer uncovered until meat is cooked. Add more stock if needed. For a creamier sauce add 2tbsp yoghurt before serving.

3 Hot Toddy Spice Bundles
Place a bundle of spices in a pan with half a pint of water and 2 to 3 tablespoons of brown sugar. Stir and bring to the boil. Remove from the heat and allow to stand for 3 minutes. Remove spice bundle and add a cup of whiskey. Serves 6.

3 Mulled Wine Spice Bundles
Place a bundle of spices in a pan with a bottle of full bodied red wine. Heat gently for 15-20 minutes. Stir occasionally, taking care not to boil. Add sugar and brandy to taste if required. Serve warm on its own or with a slice of orange.
