Tomato Sauce Recipe for Pasta
This recipe is perfect with pasta and lots of freshly grated parmesan. Make a big batch and freeze portions so you can enjoy a home cooked meal in minutes. It’s delicious as it is or you can spice it up with some crushed chillies or spicy sausage or add olives, capers, peppers or mushrooms – whatever you like!
Fry a finely diced large red onion in a tablespoon of olive oil until soft. Add 2 or 3 cloves of crushed garlic and a tablespoon of tomato puree and cook for a couple of minutes (keep stirring and make sure the garlic doesn’t burn). Add 2 x 400g tins of really good quality chopped tomatoes, a teaspoon of caster sugar, a quarter of a teaspoon of Quay Ingredients Cayenne pepper, a vegetable stock cube and some Quay Ingredients freshly ground black pepper and Fleur de Sel to taste. Simmer gently for 1 hour, stirring occasionally, until thickened.
